Pineapple Quick Bread
A moist and flavorful bread bursting with tropical pineapple sweetness, perfect for breakfast or a snack!
Ingredients:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 2 large eggs
- ½ cup unsalted butter, melted
- 1 tsp vanilla extract
- 1 cup crushed pineapple (with juice)
- ½ cup chopped pecans or walnuts (optional)
- ½ tsp cinnamon (optional, for extra flavor)
Instructions:
- Preheat & Prepare
- Preheat oven to 350°F (175°C).
- Grease and flour a 9×5-inch loaf pan.
- Mix Dry Ingredients
- In a large bowl, whisk together flour, sugar, baking soda, baking powder, salt, and cinnamon (if using).
- Combine Wet Ingredients
- In another bowl, whisk eggs, melted butter, vanilla, and crushed pineapple (with juice).
- Make the Batter
- Gradually mix the wet ingredients into the dry ingredients until just combined.
- Fold in chopped nuts if using.
- Bake the Bread
- Pour batter into the prepared loaf pan.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Cool & Serve
- Let cool in the pan for 10 minutes, then transfer to a wire rack.
