Pineapple Quick Bread

A moist and flavorful bread bursting with tropical pineapple sweetness, perfect for breakfast or a snack!

Ingredients:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 2 large eggs
  • ½ cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 1 cup crushed pineapple (with juice)
  • ½ cup chopped pecans or walnuts (optional)
  • ½ tsp cinnamon (optional, for extra flavor)

Instructions:

  1. Preheat & Prepare
    • Preheat oven to 350°F (175°C).
    • Grease and flour a 9×5-inch loaf pan.
  2. Mix Dry Ingredients
    • In a large bowl, whisk together flour, sugar, baking soda, baking powder, salt, and cinnamon (if using).
  3. Combine Wet Ingredients
    • In another bowl, whisk eggs, melted butter, vanilla, and crushed pineapple (with juice).
  4. Make the Batter
    • Gradually mix the wet ingredients into the dry ingredients until just combined.
    • Fold in chopped nuts if using.
  5. Bake the Bread
    • Pour batter into the prepared loaf pan.
    • Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool & Serve
    • Let cool in the pan for 10 minutes, then transfer to a wire rack.
    • Slice and enjoy!
