Golden Crispy Chicken with Parmesan Mushroom Sauce

A deliciously crispy chicken dish served with a rich, creamy Parmesan mushroom sauce!

Ingredients:

For the Crispy Chicken:

  • 2 large chicken breasts (halved lengthwise to make 4 cutlets)
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ cup vegetable oil (for frying)

For the Parmesan Mushroom Sauce:

  • 2 tbsp butter
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tsp Italian seasoning
  • 1 tbsp chopped parsley (for garnish)

Instructions:

  1. Prepare the Chicken
    • Set up a breading station: one bowl with flour, one with beaten eggs, and one with panko, Parmesan, garlic powder, paprika, salt, and pepper.
    • Dredge each chicken cutlet in flour, dip in eggs, then coat with the panko mixture.
  2. Cook the Chicken
    • Heat oil in a large skillet over medium heat.
    • Cook chicken for 3-4 minutes per side until golden brown and crispy.
    • Transfer to a plate and keep warm.
  3. Make the Parmesan Mushroom Sauce
    • In the same pan, melt butter and sauté mushrooms until softened.
    • Add garlic and cook for 30 seconds.
    • Pour in heavy cream and chicken broth, stirring to combine.
    • Add Parmesan, salt, pepper, and Italian seasoning. Simmer until thickened.
  4. Assemble & Serve
    • Pour the creamy Parmesan mushroom sauce over the crispy chicken.
    • Garnish with chopped parsley and serve with pasta, rice, or mashed potatoes.
