A rich and creamy casserole packed with tender broccoli, cheesy goodness, and fluffy rice—perfect as a side or main dish!

Ingredients:

  • 2 cups cooked rice (white or brown)
  • 3 cups fresh or frozen broccoli florets (steamed until tender)
  • 2 tbsp butter
  • ½ small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) cream of mushroom or cream of chicken soup
  • ½ cup milk
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • ½ cup shredded mozzarella cheese
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional)
  • ½ cup crushed Ritz crackers or breadcrumbs (optional, for topping)

Instructions:

  1. Preheat Oven
    • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Prepare the Base
    • In a large skillet, melt butter over medium heat. Sauté onions until soft, then add garlic and cook for 30 seconds.
