Cajun Cabbage Jambalaya

A flavorful, one-pot dish packed with Cajun spices, tender cabbage, smoky sausage, and rice—perfect for a comforting meal!

Ingredients:

  • 1 lb smoked sausage (or andouille), sliced
  • 1 lb ground beef or pork
  • 1 small onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • ½ head cabbage, chopped
  • 1 (14.5 oz) can diced tomatoes (with juice)
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1 tsp Cajun seasoning (adjust to taste)
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp thyme
  • ½ tsp oregano
  • 1 bay leaf
  • 1 tbsp hot sauce (optional)
  • 2 green onions, chopped (for garnish)

Instructions:

  1. Cook the Meat
    • In a large pot or Dutch oven, brown the sausage over medium heat. Remove and set aside.
    • In the same pot, cook ground beef until browned. Drain excess grease.
  2. Sauté Vegetables
    • Add onion, bell pepper, and garlic to the pot. Sauté until softened.
  3. Add Cabbage & Seasonings
    • Stir in cabbage, diced tomatoes, Cajun seasoning, salt, pepper, paprika, thyme, oregano, and bay leaf.
  4. Simmer with Rice
    • Pour in chicken broth and bring to a boil. Stir in uncooked rice.
    • Reduce heat to low, cover, and simmer for 20-25 minutes until rice is tender.
  5. Finish & Serve
    • Remove bay leaf and stir in cooked sausage.
    • Garnish with green onions and serve hot.
