Cajun Cabbage Jambalaya
A flavorful, one-pot dish packed with Cajun spices, tender cabbage, smoky sausage, and rice—perfect for a comforting meal!
Ingredients:
- 1 lb smoked sausage (or andouille), sliced
- 1 lb ground beef or pork
- 1 small onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- ½ head cabbage, chopped
- 1 (14.5 oz) can diced tomatoes (with juice)
- 1 cup uncooked white rice
- 2 cups chicken broth
- 1 tsp Cajun seasoning (adjust to taste)
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- ½ tsp thyme
- ½ tsp oregano
- 1 bay leaf
- 1 tbsp hot sauce (optional)
- 2 green onions, chopped (for garnish)
Instructions:
- Cook the Meat
- In a large pot or Dutch oven, brown the sausage over medium heat. Remove and set aside.
- In the same pot, cook ground beef until browned. Drain excess grease.
- Sauté Vegetables
- Add onion, bell pepper, and garlic to the pot. Sauté until softened.
- Add Cabbage & Seasonings
- Stir in cabbage, diced tomatoes, Cajun seasoning, salt, pepper, paprika, thyme, oregano, and bay leaf.
- Simmer with Rice
- Pour in chicken broth and bring to a boil. Stir in uncooked rice.
- Reduce heat to low, cover, and simmer for 20-25 minutes until rice is tender.
- Finish & Serve
- Remove bay leaf and stir in cooked sausage.
- Garnish with green onions and serve hot.
