Pineapple Cream Cheese Pie
A creamy, tropical dessert with a luscious pineapple cream cheese filling in a buttery graham cracker crust.
Ingredients:
For the Crust:
- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- 6 tbsp melted butter
For the Filling:
- 8 oz cream cheese, softened
- ½ cup powdered sugar
- 1 tsp vanilla extract
- 1 cup crushed pineapple, drained
- ½ cup heavy whipping cream
For the Topping:
- 1 cup whipped cream
- ¼ cup crushed pineapple (for garnish)
- Toasted coconut flakes (optional)
Instructions:
- Prepare the Crust
- Preheat oven to 350°F (175°C).
- Mix graham cracker crumbs, sugar, and melted butter.
- Press into a 9-inch pie dish and bake for 8-10 minutes. Let cool.
- Make the Filling
- Beat cream cheese, powdered sugar, and vanilla until smooth.
- Fold in drained crushed pineapple.
- Whip the heavy cream until stiff peaks form, then fold into the mixture.
- Assemble the Pie
- Spread the filling evenly into the cooled crust.
- Refrigerate for at least 4 hours or until set.
- Add the Topping
- Spread whipped cream over the pie.
- Garnish with crushed pineapple and toasted coconut flakes if desired.
