Pineapple Cream Cheese Pie

A creamy, tropical dessert with a luscious pineapple cream cheese filling in a buttery graham cracker crust.

Ingredients:

For the Crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tbsp melted butter

For the Filling:

  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup crushed pineapple, drained
  • ½ cup heavy whipping cream

For the Topping:

  • 1 cup whipped cream
  • ¼ cup crushed pineapple (for garnish)
  • Toasted coconut flakes (optional)

Instructions:

  1. Prepare the Crust
    • Preheat oven to 350°F (175°C).
    • Mix graham cracker crumbs, sugar, and melted butter.
    • Press into a 9-inch pie dish and bake for 8-10 minutes. Let cool.
  2. Make the Filling
    • Beat cream cheese, powdered sugar, and vanilla until smooth.
    • Fold in drained crushed pineapple.
    • Whip the heavy cream until stiff peaks form, then fold into the mixture.
  3. Assemble the Pie
    • Spread the filling evenly into the cooled crust.
    • Refrigerate for at least 4 hours or until set.
  4. Add the Topping
    • Spread whipped cream over the pie.
    • Garnish with crushed pineapple and toasted coconut flakes if desired.
  5. Serve & Enjoy
